Is it legal in the states of WA and OR to have the doors off of a street legal Jeep and still drive it on the street or highway?
Second question assuming the above answer is yes, I assume you still need at least a driver's side rear view mirror? What is the best way to get one attached? Do I also need the passenger side?

No, not legal to be missing the driver's side mirror.
Must have two (2) mirrors, a driver's side and either center or pass. side.
As a side note, depending on what kind of day and what the LEO's quirks are, not having doors might get you a ticket too.

Not sure about JK hinges, but I know that CJ YJ TJ guys use a motorcycle Mirror in the hinge. Don't think you can see much with it wobbling around, but it looks good.

Only in a Jeep.
You have to have door sills that prevent schtuff from rolling out of the rig onto the roadway. That said, you may still get a ticket for going doorless if you catch an officer in a mood and you'd have to take it to court.
SquirrelCrusher can give you the details.
Yes, you need a driver's side mirror.
